Miss 8 is having a growth spurt. She's already eaten a large bowl of overnight oats with fruit, yoghurt and nuts and complained she's still hungry. So I cooked up this sucker.
To Make: 2 eggs cracked inside a round cookie cutter and cooked in a fry pan, with a wee bit of olive oil and topped with smoked salmon. Would be better with some greens on the side, but I didn't have any. Protein overload should fill her up 😳
