Ginger Slice! I saw a picture of a gooey, delicious looking ginger slice filled with refined sugar and flour .... the usual recipe. So I made this instead. And I must say, I have totally outdone myself here. This ginger slice is DELICIOUS!!! To make: The base: In the food processor Whiz: 3/4 cup raisins, 2 1/2 cups nuts or seeds (I used pumpkin seeds and cashews), a tbsp sized piece of whole ginger. Add 100 grams of melted butter and 2 tsps of baking powder. Mix well. Press into cake tin and cook on 180 degrees for 15 minutes. The topping - Ginger Caramel: In a saucepan put 50 grams of butter, 1 Tbsp honey, 1 tbsp of tahini, 3 - 6 tsps of ground ginger (depends how spicy you like it!). Bring to a rolling boil. Add 1/2 can of coconut cream. Bring to a rolling boil. Pour on top of the baked base. Allow to cool. Then set in fridge. Time in the kitchen: 15-20 minutes. And worth every second!! Freezes well. Disclaimer: This is free of refined sugar, but still contains raisins and honey which are different types of sugar. This is still a treat food, so serve in small slices and share with your friends!
