Lemon and Almond cake with lemon curd


Lemon and Almond cake with lemon curd To make the cake: In a large bowl melt: 100 grams of butter Add ½ cup lemon juice ⅓ cup sugar or honey Zest of 2 lemons 2 eggs Beat well Add 1 ½ cups of almond flour 1 cup of gf flour mix 2 tsps of baking powder Mix well Pour into a medium sized cake tin. Bake in the oven on 180 degrees for 30 to 45 minutes or until cooked.

To make the Lemon Curd

In a Bain Marie melt: 50 grams of butter 1 tbsp of honey or sweetener of your choice

Add: 2 grated lemon rinds the juice of 5 lemons.

Mix well.

Add 2 beaten eggs

Whisk well.

Keep whisking over heat until thick (about 10 minutes or so).

Time in the kitchen: 15 -20 minutes

Pour lemon curd over the cake and serve.
