Thai Inspired Mango Chutney!


Thai Inspired Mango Chutney! To make: In a small pot cook: 1 finely chopped red onion Diced garlic Peanut oil (or similar) Heat for around 5 minutes, or until onion is nearly translucent Add 2 cups of diced (fresh or frozen) mango 2 tbsp lemon juice 2 tbsp lime juice 1 tbsp of grated ginger Heat through until mango soft (about 5 to 10 minutes) Add fresh basil and/or coriander, roughly chopped. Stir through Take off heat and serve hot, warm or cold Time in the kitchen: 5 minutes prep time, 10 to 15 minutes cook time.
