
Thai Fish Cakes
To Make:
In the whizzer whizz til smooth:
2 eggs
1 425 gram tin of tuna, drained
1 packet of Thai Green or Red Curry
2 tbsps of flour
2 tsps of baking powder
1/2 tin coconut cream
lots of peeled garlic
Add:
2 cups of grated courgette
Whizz briefly
Pan fry in olive oil (or similar) and cook on both sides, until cooked.
Time in the kitchen: 20 minutes
Serves 4-5 people
